Step by Step Method

Step 1

In a pot over low heat bring the cream to a simmer and then add the gorgonzola and butter. Season with salt and pepper. Add spinach and ricotta. Stir until smooth. Remove from heat and keep warm.

Step 2

Cook spaghetti until al dente (8-10 minutes). Drain well. Return pasta to pot and add sauce and toss.

Step 3

Transfer pasta to a large serving bowl and sprinkle with the parmesan.

We enjoyed this pasta.It makes quite a bit of sauce, we had leftovers. Instead of spaghetti I used homemade linguine.I did try the sauce before adding the ricotta and I think I liked it better without it.Next time I will omit it.
