Step by Step Method

Step 1

Place half of the onions in a 5-quart slow cooker. Top w/garlic & half of the beef. Top w/remaining onion & beef. Combine coffee & soy sauce; pour over beef. Cover & cook on low for 9-10 hours or until the meat is tender.

Step 2

Combine cornstarch & water until smooth; stir into cooking juices. Cover & cook on high for 30 minutes or until the gravy is thickened. Serve immediately.

NOTE: The pic suggested serving w/carrots plus roasted or mashed potatoes. I think mushrooms would be an especially good add if you favor them w/pot roast

We enjoyed this with the mushroom and over mashed potatoes -- couldn't be easier. I added the mushrooms the last half hour or so of cooking time, right before adding the cornstarch mixture. Delicious! Thanks for sharing!

Simple, easy and full of flavour! We thoroughly enjoyed this pot roast! Surprised at how the coffee/soy made this so delicious! Just added a good grinding of pepper and mushrooms before cooking. Thanks for sharing this repeatable recipe TwisSis! Made for Billboard Recipe Tag.

Talk about easy! We love pot roast and anytime I don't need to brown it first (and dirty an extra pan), that is a bonus. This turned out juicy and tender and the gravy was very rich, almost like French onion soup. Will be making this again.
