Sardines On Sourdough
"I have been married for over 30 years and only just found out the other day that my husband enjoys sardines. When I saw this recipe in a Woolworths magazine which I got from the supermarket, I bought some sardines and made this for him. I am posing it here for other's to hopefully enjoy. Although, this may have been a more modern way of serving sardines than he was used to as a child, he really did enjoy these sardine's. I did go a little overboard on the salsa, but he didn't mind it at all. I used sardine's in spring water (only because I forgot which kind I had to buy whilst at the supermarket) but sardines did work well in spring water for this recipe."

Step by Step Method
Step 1
Finely grate the rind and juice of 1 of the lemon's and cut remaining lemons into wedges.
Step 2
Combine the onion, chili, chive, lemon rind and lemon juice in a bowl and season to taste. Heat a chargrill pan over a high heat. Spray bread with oil and chargrill the bread for approx; 3 minutes each side or until charred to your liking.
Step 3
Place the toast onto serving plates and top with sardines then the salsa.
Step 4
Drizzle with a little oil and serve with the lemon wedges.
