Step by Step Method

Step 1

Spray a large skillet with nonstick cooking spray and place over medium high heat. Add onion and cook, stirring until softened (3-5 minutes). Add cabbage and next 4 ingredients (-pepper) and 1/4 teaspoon of the salt and bring to a boil; reduce heat and simmer for 6-10 minutes or until cabbage is crisp tender. Transfer to a platter and keep warm.

Step 2

Sprinkle pork chops with cumin and remaining salt (1/4 teaspoon).

Step 3

Spray skillet with nonstick spray and set over medium high heat. Add chops and cook until browned and cooked through (3-5 minutes per side).

Step 4

Serve chops with the cabbage.

What a yummy dish...I used boneless pork chops...I cut the recipe in half and the hubby enjoyed his with mashed potatoes and bread & butter...I used regular raisins because that is what I had on hand...and added a pinch of sugar to cut the tartness of the red cabbage...we were impressed with the fennel seeds...what a change from the normal caraway seeds...made for "Billboard" tag game...

Very good recipe! I did add a wee bit of brown sugar to the cabbage as it was too acidic for us. Other than that, I made as directed. The fennel was very interesting in the cabbage. Thanks for sharing Ellie! Made for Billboard Recipe Tag.
