"My daughter was having her Birthday and she challenged her boyfriend to make her a cheesecake for her Birthday cake. He got online and found this recipe ~ Courtesy of Woolworths. I think the recipe may have been supplied by Philadelphia. He did a brilliant job of this, and the whole family enjoyed it. One thing he did do ~ He bought packet caramelized popcorn instead of popping his own, and I think it worked out really well. I must admit, he did a fabulous job of this for his first time at dessert!"

Step by Step Method

Step 1

Combine the biscuit crumbs and butter then press into the base of a greased and lined 22 cm round spring form pan and chill.

Step 2

Beat the cream cheese, caster sugar and vanilla with an electric mixer until smooth. Stir in gelatine and peanut butter, then fold through the cream. Pour mixture over prepared base then chill for at least 3 hours or more to set.

Step 3

Heat the sugar in a saucepan over a medium-high heat, without stirring, for 2 minutes or until sugar begins to melt.

Step 4

Continue cooking, stirring occasionally, for 2-3 minutes or until golden. Remove sugar mix from heat and carefully add extra cream. Stir until smooth then allow to cool

Step 5

Top cheesecake with popcorn and drizzle over caramel sauce.

Step 6

Serve immediately.
