Step by Step Method

Step 1

Preheat oven 350f

Step 2

Whisk together until blended the egg whites, sugar, gin, lime peel, salt and almond extract.

Step 3

In a large bowl toss the coconut with the flour, stir in the egg mixture.

Step 4

Grease baking sheets and drop by tablesponns 2 inches apart.

Step 5

Bake 15-18 minutes or until tops are lightly browned

Step 6

Remove from pans to wire rack and cool completely

Step 7

Dip bottoms of the macaroons into the melted chocolate, allow excess to drip off. Place on wax paper, Let stand until set

Step 8

Store in air tight container

These have great flavor, but they were a bit dry. I have never used flour in macaroons before, and I think the flour may keep them from being moist and chewy, like I am used to. I will try these again without the flour, but keep the gin and lime. I was experimenting for the Christmas cookie tray, so colored some of the white chocolate with red food coloring.
