Step by Step Method

Step 1

Preheat oven to 350F.

Step 2

Cook bacon in large skillet over medium heat until crisp. Transfer to paper towels and drain.

Step 3

Transfer 2 1/2 tablespoons bacon drippings from skillet to large bowl.

Step 4

Finely chop bacon; add to bowl.

Step 5

Add onion and next 7 ingredients to bowl and whisk to blend.

Step 6

Whisk in 4 to 6 teaspoons chipotle chilies, depending on spiciness desired.

Step 7

Stir in beans.

Step 8

Transfer bean mixture to 13x9x2-inch glass baking dish.

Step 9

Bake uncovered until liquid bubbles and thickens slightly, about 1 hour.

Step 10

Cool 10 minutes.

Step 11

Sprinkle with parsley and serve.

These baked beans were well enjoyed by my family. The DH had 2 helpings! I cut the recipe in half and followed the recipe exactly as written and it was easy peasy. It pared really well with our kielbasa. Made it for Football Tag Week 6, 2016.

Daily Inspiration

I highly recommend these baked beans - they were absolutely delicious. The only change I made was to use only 1 1/2 tsp. of the chipotle peppers and we found the beans spicy enough for us. I cannot wait to make them for a special occasion or potluck, but in the meantime they will be made again. I am placing this dish in my Best of 2015 file. : ) Nancy
