Step by Step Method

Step 1

Preheat oven to 350f degrees.

Step 2

Arrange steaks in buttered or sprayed shallow oven dish.

Step 3

Arrange lemon and onion slices over fish. Season with pepper and allspice. Carefully pour wine over all. Let stand for 15 minutes.

Step 4

Combine- bread crumbs, grated cheese, parsley. Sprinkle over fish.

Step 5

Dot with butter or margarine.

Step 6

Bake uncovered in 350°F oven for 25 minutes.

Yesterday was Siggi's birthday & I asked him for a menu wish list. It was short & predictable - His favorite fish is halibut & potatoes are a required part of every dinner meal in Iceland. I picked this recipe for its easy-fix & classic flavor combo. Siggi bought a large fillet instead of steaks, but the fish was perfectly moist & flavorful. In my prep haste, I forgot the red onion & I had to use dried parsley. Served w/Rosti potato rounds & wedges of avocado, it made for a healthy & delicious meal. We were both very pleased to find this recipe as part of your legacy. :-)

I love our Halibut season when we can get it fresh and your recipe has made it even more enjoyable. What a simple, easy to prepare and tasty recipe. I got it ready in the AM except for sprinkling the breadcrumbs, cheese mixture on top and dotting on the butter. I did that just before baking it. I cut the recipe to 2 servings worked well. I did use a little more than 1/8 cup wine for the moisture while baking.. The baking time for two servings was almost the same just a tad less . Thanks Derf for another great recipe
