Step by Step Method

Step 1

In large skillet cook bacon until crispy. When bacon is done drain skillet, leaving about 1 tsp of bacon grease. Place skillet back on stove on low heat and saute mushrooms, onions and peppers for approx 11 minutes or until tender.

Step 2

Sprinkle chicken breast with seasoning salt. Place on grill cook over medium heat and cook 3-4 minutes each side until almost done.

Step 3

Place cooked chicken breast on baking sheet. Cover each breast with BBQ sauce. Place 2-3 slices of cooked bacon on each chicken breast and cover with sauteed mushrooms, onions and pepper, a slice of mozzarella cheese and a slice of American cheese. Place baking sheet with chicken back on grill just long enough to melt cheese.

Enjoy.

We loved this version of chicken! It is delicious and pairs so well with the bbq sauce and the addition of the veggies. Because it’s not grilling season in my area, finished the chicken in the broiler, watching it carefully so it would not overcook and it worked really well. We had no problem in finishing off this chicken – lickety split, it was gone in no time with no leftovers. Thanks so much, MsPia, for another great recipe, once again.

What a tasty dish...I used a red bell pepper because that's what I had on hand...my barbecue sauce was Stubb's Spicy...this was so easy to prepare...made for "Billboard" tag game...
