"This recipe was adapted from a small crock pot cook book I picked up at a garage sale a couple of years ago. It is so easy and so good. It isn't very authentic - but I still enjoy it. Just 5 ingredients. Add to the crock pot in the morning and 6-8 hours later, dinner is served. Of course serve with your favorite toppings; tortillas, salsa, cheese, avocado, sour cream etc. I prefer avocado, monterey jack cheese, and salsa with mine."

Lovely, just right, spicy beef dish. I loved how easy it was to make and enjoyed the end result - tasty tender beef cubes with a great sauce. I only used one pound of beef but made the whole sauce. I plan to use it with meatballs for another tasty meal. I served the recipe over noodles, with some cottage cheese (instead of sour cream) and shaved parmesan. along side some corn ans brussels sprout. A very enjoyable dinner thanks KC

Fun facts:

Fun Fact 1:Chipotles in adobo are actually smoked jalapeno peppers, which were popularized by the Aztecs in the 16th century. They have since become a staple in Mexican cuisine.
