Step by Step Method

Step 1

Preheat oven to 400 degrees F.

Step 2

Spray the baking sheet with Pam.

Step 3

In a pie dish combine garlic and milk.

Step 4

In a separate pie dish combine dry ingredients (cornmeal -seasoning).

Step 5

Dip catfish in milk and then in cornmeal mixture and place fish on baking sheet. Sprinkle with paprika.

Step 6

Spray catfish with Pam.

Step 7

Bake for 20-30 minutes or until fish flakes easily and crust is golden.

I had every intention of cooking the fish in the oven as indicated, but the oven was taken up, therefore, I fried it in a skillet with olive oil instead. Have to say, it came out really tasty and crispy! Used fresh codfish in place of the catfish due to availability. For the Cajun seasoning, used a blend of Old Bay and Creole seasoning and boy did it ever add some good flavor! A definite do again! Thank you, Ellie, for sharing. Made it for FYC.

Delicious and crispy! I used half Tony Chachere's Cajun spice and half of my own salt free Cajun spice because the Chachere's is so salty I can't stand it (but still trying to use up what I bought when I needed some quick). Served with lemon slices and tartar sauce. Thanks for sharing!
