Elk Burger
"I was fortunate enough to spot ground Elk at a local Grocery store and immediately bought a pound. Never having cooked elk before I called on my friend Bea for advice. She said it is very lean and tends to be dry so it's a good idea to add bacon. So I put together this recipe. Nice served with fried Onions, tomatoes, swiss cheese & BBQ Sauce. But you may choose your own favorite toppings. Of course you can BBQ the burgers."

Step by Step Method
Step 1
Mix together the elk, egg, bacon, paprika, garlic, red wine,panko crumbs. salt & pepper.
Step 2
Make 3 or 4 patties 1/2"- 3/4" thick.
Step 3
Heat oil in a large skillet, medium heat.
Step 4
Pan fry patties for apprx. 6 minutes per side or until internal temp is 165f.
Step 5
Add cheese for last few minutes on the patties so it melts a bit.
Step 6
Mean while or ahead of time prepare your onions. Pan fry onions in butter over medium heat for apprx 25 minutes or in slow cooker for 7 hours on low or until they are golden.
Step 7
Place cooked Patties on bottom of the buns.
Step 8
Top with BBQ Sauce, Mustard, tomato slice & Onions or your own favorite condiments.
