Step by Step Method

Step 1

Cut off ends of cucumber, then thinly slice by hand or with a mandolin.

Step 2

Place in bowl, salt generously, put a plate on top of cakes, weigh down with vinegar bottle or some heavy object.

Step 3

After 10-15 minutes, remove weight and plate, and squeeze the slices by hand.

Step 4

Drain off liquid and discard.

Step 5

Add equal amounts of sugar, water and vinegar.

Step 6

Stir to dissolve sugar.

Step 7

Add pepper to taste and salt if needed.

Step 8

Keep in refrigerator until serving. Garnish with sliced green onion.

I prepared this to go along with a German meal I made for my daughter and grandson...it was enjoyed by all of us...we loved the tang of the vinegar and the touch of sweetness...next time I'm cutting back a bit on the liquid amount...the slices were swimming in it...I let mine relax in the frig for about 4 hours...gave the small amount that was leftover to my daughter to enjoy later...made for "FYC" tag game...

I am a HUGE fan of cucumber salads and this one was another hit at my table. The kids like it because it's sweet, I like it because it's an easy way to get the kids to eat some veggies. I made this exactly as directed. I let it marinate for about 3 hours in the refrigerator before we ate it. Glad I tried this salad!
