Step by Step Method

Step 1

In a saucepan combine the first 5 ingredients (broth - pepper) and bring to a boil. Remove from heat.

Step 2

Stir in couscous. Cover and let stand for 5 minutes. Fluff with fork.

Step 3

Meanwhile in a large bowl combine the rest of the ingredients (oranges - vinegar).

Step 4

Stir in couscous and toss.

We don’t have couscous often, and questioned myself, why not after tasting this delightful side! It was smooth and creamy, light on the pallet, and the whole thing tasted so good together. I did use a whole can (15.5 ounce) of chickpeas and to get rid of a couple of shallots from going bad, saved those babies, chopped them finely and added them to the water to cook along with the rest. Resulted in Yummy! Thank you, ellie, for sharing. Made it “For your Consideration” tag game.

A delicious couscous without been overly sweet, I scaled back for 2 serves which was just enough for 3 of us as a side dish. Thank you ellie, made for Alphabet Soup tag game.
