Step by Step Method

Step 1

Preheat oven to 325°F.

Step 2

In a large Dutch oven, heat 2 teaspoons olive oil over medium heat. Sauté the onions and garlic until softened, about 10 minutes. Remove from pan and set aside.

Step 3

Heat the remaining oil over medium-high heat and brown the beef on all sides. Spoon the onions around the roast and pour in the coffee and broth. Add the salt, pepper, thyme and bay leaf. Bring to a boil and cover. Put the pot into oven and cook 1 hour and 40 minutes. Baste occasionally.

Step 4

Remove the roast from pan and let rest 15 minutes.

Step 5

Remove the onions from the pan with a slotted spoon and set aside. Discard the bay leaf; degrease the liquid.

Step 6

Mash together the butter and flour.

Step 7

Bring the liquid to a boil and slowly whisk in the butter mixture. Simmer the sauce 10 minutes; it should be slightly thickened. Stir in the onions and vinegar; check the seasonings.

Step 8

Carve the roast thinly and serve with the onion sauce.

Except for leaving out the red wine vinegar and just using red wine, I made this recipe exactly as written. The whole family really did enjoy this roast. It had such lovely rich flavours through both the sauce and meat. I served this with roast vegetables, peas and sprout, which made for the perfect roast dinner. A wonderful dish which we all really enjoyed.

I used 2 blade steaks for this awesome flavoured braise. Made as directed with 2 changes. Braised at 250F for 2 1/2 hours and used a wee bit of tomato paste for the vinegar. This is a very full bodied dish and served it with mashed potatoes and a turnip/carrot gratin. Thank you Mike for sharing this recipe that will be made again! Made for Billboard Recipe Tag.
