"I saw these being made on Everyday Gourmet a television show here in Australia.. I made these for my DD and she absolutely loved these. Half the family loved them and the other half were not convinced, but I am posting here to make again, as I also really liked these little morsels. Garnish ingredients have been listed but I used crushed freeze dried strawberries and coconut."

Step by Step Method

Step 1

Slice open the dates & remove the pip. Try not to slice all the way through which makes it easier to stuff.

Step 2

Place a teaspoon of almond butter in the cavity where the pip was, then gently push the sides of the date together to seal.

Step 3

Melt the chocolate over a double boiler and dip the stuffed dates in chocolate, moving them around until they are completely coated.

Step 4

Place on a lined baking tray and sprinkle your choice of garnish over the top.

Place in the fridge for at least 30 minutes to set. Store in the fridge in an airtight container for up to two weeks.
