Step by Step Method

Step 1

Place rice in a saucepan with a pinch of salt and 3 cups water and cover, bring to the boil, then reduce heat to low and cook for 12 minutes and remove from the heat.

Step 2

Meanwhile, heat ghee or oil in a saucepan over medium heat and add onion and cook for 5 minutes until softened.

Step 3

Stir in ginger, garlic, bay leaf, cardamon and cinnamon and cook for 2 minutes or until aromatic and then add biryani spice mix and stir well to combine.

Step 4

Add chicken to pan and cook, stirring occasionally, for 4 minutes and the stir in yoghurt and cook for a further 10 minutes.

Step 5

Remove from the heat and stand for 10 minutes.

Step 6

Stir rice through chicken, spoon into a serving dish and scatter with almonds and coriander.

This was really good, and I loved the chicken and rice combination. I think the amount of salt might depend on the type of biryani spice that is used. I found it to be salted and seasoned well. However, I used a biryani spice mix that had hard cardamom pods and bits of cinnamon sticks, and cloves in it so it made the end product challenging to eat. It had some great, authentic flavors though. The rice and chicken were cooked perfectly. I had an overflow amount of rice, so didn't use all of it in the dish. Thank you, Pat!

I made this as instructed but subbed the fresh ginger for 1 teaspoon ground ginger and used parsley instead or fresh coriander as I couldn't find any. After tasting this, it definitely need a good shake of salt. Next time I make this I will add the salt to the chicken while cooking it so it can permeate the meat. Thx for sharing this recipe with us. :-)
