"1st published in October of 2014 by 1 of my favorite bloggers (Becky @ thecookierookiedotcom), this recipe is perfect summer fare & pure creative genius IMHO. Here's how Becky describes her recipe: "Watermelon Pizza is a delicious & fun sweet treat that everyone will enjoy! Juicy watermelon topped w/a low-fat cheesecake sauce, fresh strawberries, bananas, white chocolate chips & pecans is the ultimate healthy dessert, but still indulgent. This refreshing cheesecake watermelon pizza is an easy summer dessert you’ll want to eat all season long!" ENJOY!"

Step by Step Method
Step 1
Using an electric mixer, mix together the yogurt, cream cheese & powdered sugar (if using) until well-combined. Set aside to chill in your fridge so it will be spreadable.
Step 2
Look at the top & bottom surfaces of the watermelon slice & gently remove any seeds, but do not go digging for them. Place your watermelon slice on a lrg plate or platter.
Step 3
Spread the cream cheese mixture over the watermelon slice, like you would do w/a "pizza sauce".
Step 4
Top w/sliced bananas & strawberries. Sprinkle on the pecans (or walnuts) & the white chocolate chips. Cut into 6 slices (like pizza wedges) & serve cold. ENJOY!
Step 5
NOTE RE MY PIC: I dealt w/some ingredient issues as best I could. We're at the start of the watermelon season here in Iceland, so they are very sml (a generous serving for 1 or 2 med-sized servings). I used walnuts & cut a sml white choc bar into cubes for those toppings. My pic was the outcome, but in the interest of full disclosure -- This is messy to eat, so have napkins ready (esp for kids). I was orig attracted to this recipe because of the flavor combo & its unique presentation, but admit a deconstructed version appeals more to me now = A pile of watermelon cubes plus strawberries & banana slices, topped w/a generous drizzle of the cream cheese sauce & finally the chopped white chocolate & walnuts. :-)
