Step by Step Method

Step 1

Melt butter with oil in large nonstick skillet over medium heat.

Step 2

Add garlic, green onion and stir until pale golden, about one minute.

Step 3

Add beets and pepper; reduce heat to medium low and saute.

Step 4

Stir in lemon juice, add pasta.

Step 5

Stir in sour cream and 4 tbsp parsley.

Step 6

Season with salt and pepper.

Step 7

Serve with additional parsley on top.

In an effort to make this a little more "lite" I used less pasta, oil and sour cream than called for. Still yummy; still pink! Made for Think Pink 2015
