"Most cheesecakes are lrg & made w/a homemade crust of some kind. While I'd do that for most occasions entertaining guests, there are times when you want a sml sweet treat for yourself or for you & another couple. That's when sml & simple become your goals & it usually happens for me when we host our best friends for a light dinner meal & games night. A late dessert is a given, usually a cheese/fruit plate w/a small sweet treat. This recipe by Jennifer at bakeorbreakdotcom & the 1 that follows it by Taste of Home are my favorite go-to choices for sml sweet treats. Jennifer wrote the recipe for a lrg cheesecake, but I use it to make her cheesecake in store-bought mini tart shells (10 per pkg) so it was halved. These little treats are divine! ENJOY!"

Step by Step Method
Step 1
Using an electric mixer on med speed, beat the cream cheese, sugar, Bailey's Irish Cream & vanilla until well-combined & smooth.
Step 2
In a separate bowl, use an electric mixer to whip the cream on high until soft peaks form.
Step 3
Fold about 1/3 of the whipped cream into the cream cheese mixture. Then gently fold in the remaining whipped cream.
Step 4
Spoon the cheesecake mixture evenly into the mini tart shells & chill at least 4 hrs. The size of commercial tart shells can vary, so you may have an excess of cheesecake filling you can put in a sml bowl. :-)
Step 5
TO SERVE: Serve as is or garnish as desired (a sml strawberry w/a mint leaf is nice).
