"I found this recipe a while back on an asparagus site, but altered it a little to suit the family.. I have served this both hot and cold, and both ways are work and taste equally as well. So this recipe can be served hot as a entre side or main, or cold as a side salad."

Step by Step Method

Step 1

To prepare the Fragrant Lemon Dressing, use a whisk or fork, to combine olive oil, garlic, honey, lemon rind and juice and pepper in a small bowl. Set aside (if not using at once store in the refrigerator).

Step 2

Cook the asparagus by steaming 4-5 minutes or until just tender. (Or cook the asparagus your preferred way until just tender.)

Step 3

Arrange freshly cooked asparagus on a large serving platter or individual serving plates.

Step 4

Drizzle dressing over, dust with coarsely ground black pepper and serve hot, warm or cold.

Step 5

Top with some grated or shave parmesan before serving if desired.

Delightfully delicious! I served this hot and used the wholegrain mustard option and used meyer lemon. Made the dressing earlier in the day so it had time for the flavours to mingle which produced a bright and citrusy dressing. Will be making this again and again. Thank you for sharing Tisme!
