"These cookies are dangerous to have around because you will eat them all, no kidding these are the best cookies, You can use whatever nuts you have around I like to use mixed nuts I think they are the best for flavor, the nuts must be ground up in a food processor, I usually use a heaping 1/2 cup ground but you could use 1 cup or even more, the more you use the more nut flavor. You can also add in raisins or chocolate chips"
Preheat your oven to 350 degrees. (Oven rack positioned to middle).
Spray a large cookie sheet with vegetable cooking spray.
In your bowl of your electric mixer, cream butter for 30 seconds. Add in both brown sugars and white sugar; beat 1-2 minutes. Add in egg, peanut butter and vanilla; beat 2 minutes.
In a medium bowl combine flour with baking soda and cinnamon; add to bowl and mix until well combined. Then mix in nuts and oats.
Drop by heaping tablespoons on cookie sheet.
Bake 9-10 minutes until golden brown around the edges (9-10 for crispier cookies, bake less time for softer chewy cookie).
Cool on the cookie sheet then move to a cookie rack.

I made these ahead to freeze for my cookie trays. Taste tested and approved! I added 1 cup of nuts as we love them and used my mini chopper to chop them up. These will be a great addition to my cookie trays this year!
Loved these cookies! I used a mix of nuts including pecans, pistachios and cashews. Wow!
My new all time favorite cookie!!! Just awesome!!!
LOVE them! What a good cookie this is! They were gone quickly, so of course I had to make more. The cookie jar is now where my husband's hand hangs out most of the time!
I am the cookie maker for the family this year so I have been busy making all kinds of cookies, some that we have every year and then new ones to try. This is a really delicious cookie and we will enjoy them very much!
You got the name right on these cookies. We loved them and I have requests from the peanut gallery (my kids) to make them again soon!
