HF, I use fig jam in chicken breasts. I have made this several times.
Use an herb goat cheese, or make your own. Flatten the chicken breasts and spread with the goat cheese and fine chopped walnuts. Roll up and secure.
Dust lightly with flour, season well with s/p, and I use rosemary and thyme.
Pan saute in a mix of butter and olive oil.
Once brown, brush with a mix of fig jam and honey.
Put pan in the oven to finish cooking. Brush once more during cooking; they don't take long.
Serve. You could make a sauce is you want; but just as good as is.
