After tasting the dressing, I felt it needed a little something so I added 1/8 teaspoon cumin which worked great. The instructions where a bit confusing as it says to place the shrimp on top of the dressing but later instructs to mix the remaining ingredients with the dressing. So what I did was, I topped the lettuce with the shrimp, 1/2 of a sliced avocado and 2 tablespoons diced red onion. I only used 2 tablespoons of the red onion as 1/4 cup would have been way too much. Then I drizzled this the dressing and sprinkled everything with the cilantro. I do have lots of the dressing left so I can make another salad for my lunch tomorrow.

This is has amazing flavors. It is quick and easy to put together so it is perfect for a busy day dinner. I used red peppers instead of green as that is what I had on hand. I did have to add about 1/2 a cup of water so the sauce wouldn't stick, but other than that I followed directions as listed.

I made this using fast fry pork chops and did not use the broiler for the carrots, instead roasted everything for 20 minutes, turning the chops after 15 minutes, and broiled the chops for 5 minutes, which worked perfectly.

I believe this is the first time I have ever "cooked" cucumbers and I am surprised at how this turned out. I took a little over 5 minutes for the cucumber to become translucent so it was very quick and easy to put together. I tasted it before letting it sit and I was worried it was lacking flavor, but, after sitting for about an hour, that all changed. It tasted wonderful!! I used red onion as that is what I had. I will definitely be making this again.

This was made using leftover rotisserie chicken and thickened with sweet white rice flour to make it gluten free and it came together nicely. Nice belly warming soup. Thx for sharing your recipe.
