Coconut Chicken Fingers with Chilli Sauce

Coconut Chicken Fingers with Chilli Sauce

Ah. Homemade Coconut Chicken Fingers. Ya got to love them. First, plain and boring or secondly with a little chili sauce and perhaps some cajan spice and you are on your way to a little blitz in heaven. Two problems here though. I am not a fan of the first kind and this recipe has nothing to do with a scrumptious dipping sauce. A nice addition, yes, but not a main part of this dish. Or is it? What's in the dish? coconuts coconut milk coconut oil (get the feeling that there is lots of coconuts? Ya, there is!) chicken cayenne pepper and more! I wish I could just chalk it up to the

Mexican Rice & Black Bean Casserole (With Chicken)

Can I share a secret? It is a bit embarrassing, but with every good embarrassing secret, it makes for good reading. I suppose. Ok, here goes. A bit personal here. Being a part of running RecipeZazz.com is lots of fun. And I get to dive into something else that I love. Being a food blogger on the blogging side of a recipe sharing site. But I must say, there is one really awful and hard thing about being a food blogger. Ok, here goes. Don't laugh. Serious stuff here. It's 3:00 in the afternoon. I am rummaging through, literally now, tens of thousands of recipes, trying to decide what recipe I

Garlic Ham Pizza Sliders

Garlic Ham Pizza Sliders

Well, as they say... good intentions are absolutely every...thing! Right? Well, honestly, I did have good intentions. I truly had a great idea. A series of posts bringing you along a journey of healthy eating and sure enough. Hey, look. There's a squirrel! Or something. Some kind of distraction. Forget the squirrel. Did you just taste these garlic and ham pizza sliders in your head? It's okay. I tell myself that it is okay. But them sliders though! I love, love kneading fresh dough. The feeling of splashing just the right amount of flour over the rawness of a mound of dough. Reminds me of

Indian Butter Chicken

Indian Butter Chicken

I love Indian food. Most of all ~ Indian Butter Chicken. I will be honest though, this is one of those recipes where I've always shied away from making. I think it is because I have convinced myself that I will never be able to make it authentically like the way they do in the restaurants. And certainly not as tasty. Know what? I am happy to say that I was wrong. They only thing that kept me from tasting this AMAZING recipe is my own self doubt. Know what I mean? Having Indian Butter Chicken without naan bread is kind of like having grilled cheese without the cheddar. It doesn't work. And I

Fresh Tomato Basil Linguine

It's gonna be one of those nights. The kind of night when every recipe under the sun rattles through your brain but you know that you feel like making not one of them. No way. Fatigue strikes in. Kids are screaming that they are hungry and they won't make it past the 5 minute prep time. The dog needs to go for a walk and someone just needs to spend 40 minutes on the phone telling you about all the wrong in the world and you don't want to be rude but - like I said, it is one of those nights. Reality sinks in and it becomes mac and cheese for the younglings, open the back room door to let the

Creamy Chicken Sweet Potato Noodles

Creamy Chicken Sweet Potato Noodles

If there is one thing that I would LOVE to say about this Creamy Chicken Sweet Potato Noodles recipe is that it is 100% healthy eating. It sure looks like it and the ingredients could call for more health but truth be told, I went a little bit heavy on two ingredients. Butter (and lots of it) and heavy cream. It gives this recipe a more rich and full flavor. Of course, the wine, mushrooms, garlic et all seriously helps too. I could use a little bit of that right about now. Creamy Chicken Sweet Potato Noodles I am single parenting this week. Well, ok, it is just for two nights. Tam
